Guiding the selection of the vines was the belief that the area’s climatic conditions and soil characteristics would ennoble and exalt the qualities of the autochthonous vines such as Sangiovese as well as the qualities of the two allochthonous vines such as Merlot and Cabernet-Sauvignon thus conferring to the wines a strong character which is reflective of the area. There are 17 hectares of specialized vineyards: 8 hectares are devoted to Merlot, 5.5 to Cabernet-Sauvignon and the rest to Sangiovese, Vermentino and Viognier. The vineyards are located in the low hill area (80 mt. above sea level) where the soils offer the best pedo-climatic characteristics for the growth of the vine; - Planting order: for Merlot and Sangiovese this calls for 4500 plants per hectare with bilateral spurred cordon while there are 6,000 plants per hectare of Cabernet-Sauvignon with monolateral spurred cordon - Production per plant: from 800 grams to 1 kilo - Yield per hectare: an average of 50 quintals - Time of harvest: from the first week in September for Merlot to the first week in October for Cabernet Sauvignon - Method of harvest: manual, with 20 kilo crates
